Easy to Make Blue Berry Cup Cakes


Who needs blueberry muffins when we have blue berrry cupcakes. This is a simple tasty treat for after school or anytime for that matter. Theres no requirement for icing or other sweet treats as the berries take care of that.



Blueberry Cupcake Recipe Ingredients



Ingredients for blueberry cupcakes for making the most tasty blueberry cupcake recipe, your kids will love these healthy little energy treats.


1. 1 1/4 cups flour

2. 2 cup sugar

3. 1 3/4 teaspoons baking powder

4. 1/4 teaspoon salt

5. 1/3 cup butter

6. 1 egg, beaten

7. 3/4 cup milk

8. 1/2 teaspoon vanilla

9. 2/3 cup blueberries

10. 1/3 cup chopped unblanched almonds, lightly toasted.

1. Sift dry ingredients together to mix well.

2. Cut and divide the butter until mixture resembles coarse crumbs.

3. Whisk the egg vigorously to incorporate air and make the eggs light.

4. Stir in the egg, milk and vanilla and combine thoroughly.

5. Add to dry mixture and stir together and add the blueberries.

6. Fill well greased cupcake tins with batter until two thirds full.

7. Bake in a pre-heated 350 degree oven for 25 minutes or until done.

Makes 15 large Blueberry Cupcakes, depending on your pan.

Visiting Mama for lunch and chocolate cupcakes


We have just spent this afternoon with Mama Kelly, We hade a very nice lunch and Jack had a big cuddle. After lunch we all enjoyed a very nice chocolate brownie cupcake that Charmaine baked fresh this morning.

Mouth watering cupcakes for your hungry family

Chocolate Cupcake

A yummy easy to make chocolate buttermilk cupcake.


  

 



Ingredients:


  • 3/4 cup Unsweetened Cocoa Powder
  • 1-1/2 cups Flour
  • 1-1/2 cups Sugar
  • 1-1/2 teaspoon Baking Soda 
  • 3/4 teaspoon Baking Powder 
  • 3/4 teaspoon Salt 
  • 2 Large Eggs 
  • 3/4 cup Warm Water 
  • 3/4 cup Buttermilk 
  • 3 tablespoons Safflower Oil 
  • 1 teaspoon Vanilla Extract

  
Preparation:

  
Preparation, this is the key to creating fabulous tasty cupcakes.

  
1. Preheat the oven to 350 F.

  
2. Line standard muffin tins with paper liners.

  
3. In a large bowl, sift the cocoa powder, flour, sugar, baking soda, baking powder, and the salt.

  
4. Add the eggs, warm water, buttermilk, oil, and vanilla.

  
5. Stir until the mixture is smooth.

  
6. Divide the batter among the muffin cups.

  
7. Fill each tin 2/3 full.

 
8. Bake until the tops spring back when touched which takes approximately 20 minutes.

 
9. Transfer the cupcakes to wire racks.

 
10. Let cool.

  
11. The cupcakes will keep, covered, for up to two days.
